Sisig came from the kapampangan word “sisigan” which means to make (something) sour. This zesty dish was invented by an old kapampangan woman named Lucia Cunanan. Aling Lucing, as her eatery’s patrons call her, felt it was wasteful to just throw away the pig ears from her kitchen. What she did was grill it and mince it together with pig face, onions and a mixture of vinegar and calamansi. The resulting dish is sisig, and it became an instant hit for everyone who ate from her store.

Sisig, as of today has different variations. Some sisig call for the addition of mayonnaise, some add pig brains to the mix and some top the dish with chicharron. Different, but all delicious!
